Ham, Onion, Green Pepper and Cheddar Frittata

Ingredients 

  • 1 tbsp olive oil
  • 1 cup cubed cooked ham
  • 1/2 onion peeled and coarsely chopped
  • 1 whole cubanelle or green bell pepper chopped
  • 6 whole eggs
  • 2 handfuls of cheddar cheese

Instructions

  • Gather all ingredients before starting recipe.
  • Pre heat oven to 425°
  • Heat olive oil in a medium oven proof skillet over medium high heat.
  • Chop one Cubanelle or one half of a large green bell pepper into slices or medium sized chop.
  • Peel and chop 1/2 of a Spanish onion and add to oil,
  • Add cubed ham and green pepper and stir to combine, sauté for 7-10 minutes or until the onions and the peppers have started to soften and the ham is beginning to get golden around the edges. Remove from heat.
  • Beat 6 whole eggs with a fork in a small mixing bowl, when mixed, add 2 handfuls of grated cheddar cheese,
  • Add egg mixture to the ham mixture, stir to combine and to make sure that the egg covers the bottom of the pan.
  • Place the pan in a pre heated oven and bake for 25-30 minutes, or until the top is golden and the egg is set.
  • Serve with a garden salad.
