Do you have some left over ham from the holidays? This is definitely an easy one pan meal, breakfast, lunch or dinner.
Ingredients
- 1 tbsp olive oil
- 1 cup cubed cooked ham
- 1/2 onion peeled and coarsely chopped
- 1 whole cubanelle or green bell pepper chopped
- 6 whole eggs
- 2 handfuls of cheddar cheese
Instructions
- Gather all ingredients before starting recipe.
- Pre heat oven to 425°
- Heat olive oil in a medium oven proof skillet over medium high heat.
- Chop one Cubanelle or one half of a large green bell pepper into slices or medium sized chop.
- Peel and chop 1/2 of a Spanish onion and add to oil,
- Add cubed ham and green pepper and stir to combine, sauté for 7-10 minutes or until the onions and the peppers have started to soften and the ham is beginning to get golden around the edges. Remove from heat.
- Beat 6 whole eggs with a fork in a small mixing bowl, when mixed, add 2 handfuls of grated cheddar cheese,
- Add egg mixture to the ham mixture, stir to combine and to make sure that the egg covers the bottom of the pan.
- Place the pan in a pre heated oven and bake for 25-30 minutes, or until the top is golden and the egg is set.
- Serve with a garden salad.
