Heat olive oil in a medium oven proof skillet over medium high heat.
Chop one Cubanelle or one half of a large green bell pepper into slices or medium sized chop.
Peel and chop 1/2 of a Spanish onion and add to oil,
Add cubed ham and green pepper and stir to combine, sauté for 7-10 minutes or until the onions and the peppers have started to soften and the ham is beginning to get golden around the edges. Remove from heat.
Beat 6 whole eggs with a fork in a small mixing bowl, when mixed, add 2 handfuls of grated cheddar cheese,
Add egg mixture to the ham mixture, stir to combine and to make sure that the egg covers the bottom of the pan.
Place the pan in a pre heated oven and bake for 25-30 minutes, or until the top is golden and the egg is set.
