The traditional combination with Parslied Yellow Beans is grilled or roasted pork or grilling pork sausages. I often make home made sausage, pan fried pork tenderloin or even schnitzel with this easy and tasty dish.
Ingredients
- 1 lb fresh yellow or wax beans
- 2 tbsp olive oil
- 3 tbsp chopped parlsley
- 1 plum tomato quartered
- 1/2 cubanelle or green bell pepper cut into 2" strips
- 1/3 cup sour cream
- 1 tbsp all-purpose flour
- 1 tspn kosher salt
Garnish
- 6-8 baby plum tomatoes, halved
- 2-3 sprigs chopped Italian parsley
Instructions
- Gather all ingredients before starting.
- Chop Parsley.
- Cut end off the yellow beans.
- Heat oil in a medium sized sauce pan over medium high heat add chopped parsley and reduce heat to medium.
- Slice beans and wash in a colander, slice tomatoes and peppers.
- Add sliced beans, tomato and green pepper to parsley and stir to combine and cook for a few minutes or until the vegetables are heated through and are beginning to steam.
- Remove from heat and add enough water to barely cover vegetables.
Final Steps
- When beans are cooked, remove pan from heat.
- Mix together sour cream and flour in a small bowl, add 1-2 tablespoons of water if the sour cream is thick, and stir well until the flour and the sour cream are totally smooth.
- Add a little of the cooking liquid to the sour cream mixture stir to incorporate with the sour cream, then stir the mixture into the still hot beans. Combine and mix with a wooden spoon until the sauce has thickened.
