Ham, Onion, Green Pepper and Cheddar Frittata

Ingredients 

  • 1 tbsp olive oil
  • 1 cup cubed cooked ham
  • 1/2 onion peeled and thinly sliced
  • 1/2 green cubanelle or bell pepper sliced
  • 4 whole eggs
  • 1/3 cup milk
  • 1/2 cup grated cheddar cheese

Instructions

  • Gather all ingredients before starting recipe.
  • Pre heat oven to 425°
  • Heat olive oil in a medium oven proof skillet over medium high heat.
  • Peel and thinly slice 1/2 onion and julienne 1/2 green cubanelle or bell pepper and add to skillet.
  • Add 1 cup cubed cooked ham and stir to combine, sauté for 7-10 minutes or until the onions and the peppers have started to soften and the ham is beginning to get golden around the edges. Remove from heat.
  • Beat 4 whole eggs, 1/3 cup milk and 1/2 cup grated cheddar cheese with a fork in a small mixing bowl.
  • Add egg mixture to the ham mixture, stir to combine and to make sure that the egg covers the bottom of the pan by running a spatula around the edge and slightly lifting the filling.
  • Place the pan in a pre heated oven and bake for 25-30 minutes, or until the top is golden and the egg is set.
  • Serve with a garden salad.
