Gather all ingredients before starting recipe.
Pre heat oven to 425°
Heat olive oil in a medium oven proof skillet over medium high heat.
Peel and thinly slice 1/2 onion and julienne 1/2 green cubanelle or bell pepper and add to skillet.
Add 1 cup cubed cooked ham and stir to combine, sauté for 7-10 minutes or until the onions and the peppers have started to soften and the ham is beginning to get golden around the edges. Remove from heat.
Beat 4 whole eggs, 1/3 cup milk and 1/2 cup grated cheddar cheese with a fork in a small mixing bowl.
Add egg mixture to the ham mixture, stir to combine and to make sure that the egg covers the bottom of the pan by running a spatula around the edge and slightly lifting the filling.
Place the pan in a pre heated oven and bake for 25-30 minutes, or until the top is golden and the egg is set.
Serve with a garden salad.
