Chili and Black Pepper Roasted Carrots

Ingredients 

  • 3 large carrots peeled and cut into 1/2 inch slices
  • 2 tbsp chili powder
  • 1 tspn ground black pepper
  • 3 tbsp fresh chopped parsley (or 2 tablespoon dried)
  • kosher salt to taste
  • 2 tbsp olive oil

Instructions

  • Gather all ingredients before starting recipe.
  • Pre heat oven to 450°
  • Peel carrots and cut into 1/2" thick rounds.
  • Mix the chili powder, black pepper, parsley and olive oil, pour over the sliced carrots.
  • Place on a non-stick aluminum foil lined cookie sheet and bake for 25-30 minutes, turn halfway through.
