2mediumsweet potatoes peeled and cut into 1-inch cubes
2tbspgaram masala
2tbspolive oil
kosher salt to taste
Garam Masala (ground in a spice grinder)
1tbspcoriander seeds or 1 1/2 tablespoon ground coriander
2tspncumin seeds or 2 1/2 teaspoons ground
1tspnwhole cloves or 3/4 teaspoon ground
1/2tspnwhole black pepper corns or 1/2 teaspoon ground
3piecesof 3" cinnamon sticksbroken up or 1 1/2 teaspoon ground
3piecesbay leavesbroken up or 3/4 teaspoon ground bay leaf

Instructions
Gather all ingredients before starting recipe.
Pre heat oven to 450°
Peel sweet potatoes and cut into 1" chunks.
Combine Garam Masala, olive oil and kosher salt and pour over the sweet potato chunks in a deep mixing bowl.
Bake for 25-30 minutes in a pre-heated oven. Check after 15 minutes and turn the sweet potato chunks. They are done when they are fork tender.
