Pre-heat oven to 425℉
Using a fork, whip 4 whole eggs until combined.
Add 1/3 red onion, thinly sliced, 1 cup ham, 1 cup prepared croutons and season mixture with kosher salt and freshly ground black pepper. Mix to combine ingredients.
Spray a non-stick small skillet with vegetable spray and add the egg mixture.
Top egg mixture with 1/2 cup grated cheddar cheese.
Bake in a pre-heated oven for about 30 minutes, or until the top is nicely browned and the edges are sizzling.
