Hearty Cabbage with Smoked Sausage

Ingredients 

  • 1 medium white potato cubed, and par boiled
  • 1/2 lb sliced smoked sausage or kielbasa
  • 1 tbsp olive oil
  • 1/2 medium chopped onion
  • 1/2 small head white cabbage chopped
  • kosher salt and freshly ground black pepper
  • 1/2 tsp smoked paprika
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar

Instructions

Gather all ingredients before starting the recipe.

  • Slice 1/2 lb sliced smoked sausage or kielbasa into 1/2" rings and set aside until ready to use.
  • Add 1 tbsp olive oil to a medium sized skillet over medium heat and add 1/2 medium chopped onion and 1/2 lb sliced smoked sausage or kielbasa to the pan. Sauté until the sausage and onion begin to brown.
  • Add 1/2 small head white cabbage, chopped into 1" squares, and 1 medium white potato, previously parboiled, to the onion mixture. Season with kosher salt and freshly ground black pepper. Toss to combine and sauté for about 5 minutes or until the cabbage has softened.
  • Add 1/2 tsp smoked paprika, 2 tbsp honey and 1 tbsp apple cider vinegar and stir to combine. Allow to cook for another 1-2 minutes to amalgamate all the flavors.
