Pre heat oven to 200℉
Trim pork belly of rind if any, and lightly score the top of the pork belly.
Combine 1 1/2 tsp kosher salt, 1 1/2 tsp garlic powder, 1 1/2 tsp smoked paprika, 1/2 tsp cayenne pepper, 1/4 tsp ground cinnamon, and 1/2 tsp ground cumin in a small bowl.
Rub the seasoning into all sides of the pork belly and wrap in aluminum foil, twice.
Set the wrapped pork belly in an oven proof baking dish and place the dish in a preheated oven. Set your timer to 6 hours.
After 6 hours, remove pork belly and allow it to come to room temperature. Transfer the pork belly in its baking dish to the refrigerator and cool for 6 to 10 hours, or overnight.
