Gather all ingredients before starting recipe
Peel and slice onion
Heat oil in a medium skillet over medium high heat and add sliced onion, sauté until the onion starts to caramelize, about 4-5 minutes
Slice tomato and place a few slices on each hoagie bun, add pickled pepper slices if using.
Move onions to one side of skillet and add two rows of 4 slices of roast beef each in the space remaining, sauté for 1-2 minutes.
Fold cheese slices in half and top each section of roast beef, sauté another minute or until the cheese melts.
Make Sandwich
Place sauteéd onions on bottom, top with beef and cheese, sliced peppers, and add ketchup if you like.
