Broccoli Mash

Tip : Thid dish will work wonderfully well with leftover mash, peas and broccoli, just combine, add a bit of butter, reheat gently and the side dish is done.

Ingredients 

  • 10-12 baby white potatoes skin left on and quartered
  • 3-4 florets of broccoli including stems
  • 1 cup of frozen peas
  • 2 tbsp unsalted butter
  • kosher salt and freshly ground black pepper

Instructions

  • Gather all ingredients before starting the recipe.
  • Quarter 10-12 baby white potatoes and separate 2 stems of broccoli and chop the stems into 1" pieces.
  • Add broccoli and potatoes to a deep sauce pan and add water to cover. Bring to a boil and cook for about 10 minutes or until the potatoes and broccoli stems are firm tender.
  • Slice 3-4 florets of broccoli into quarters and add to potatoes and cook for 2-3 minutes.
  • Add 1 cup of frozen peas and bring to a boil. Season with kosher salt and freshly ground black pepper.
  • Drain and then return to sauce pan, add 2 tbsp unsalted butter butter and mash with a potato masher.
