Preheat oven to 400℉
Transfer 1 cod fillet to a parchment lined sheet pan and cut into 2 pieces. Generously season both sides with kosher salt and freshly ground black pepper. Cut 1 whole lemon in half and squeeze the juice over the cod. Add a drizzle of olive oil, then transfer to the preheated oven.
Bake for 10-12 minutes or until the code flakes easily with a fork.
While the cod is baking, add 2 tbsp unsalted butter to a medium sized skillet over medium heat and heat until the butter starts to bubble and turns brown, 3-5 minutes..
Once the butter has browned, add 3-4 sprigs finely chopped fresh parsley and 1/4 cup toasted pine nuts and stir to combine. Keep warm and set aside until ready to use.
After cod has cooked, place one piece on a serving plate, spoon half of the pine nut mixture on the top of each piece of cod and drizzle the remaining brown butter over the fillets.
Garnish with slices of fresh lemon.
