This Brown Butter Cod recipe is simple, delicious, and surprisingly impressive. I don’t often make cod, but I probably should because it’s perfect for anyone whose first choice would not be fish. Cod has a mild flavor, contains no small bones, and has a firm, flaky texture. The combination of lemon, brown butter, and pine nuts gives this dish a restaurant-quality feel with almost no effort.
Ingredients
- 1 cod fillet
- kosher salt and freshly ground black pepper
- drizzle of olive oil
- 1 whole lemon
- 2 tbsp unsalted butter
- 3-4 sprigs finely chopped fresh parsley
- 1/4 cup toasted pine nuts
Instructions
Gather all ingredients before starting the recipe.
- Preheat oven to 400℉
- Transfer 1 cod fillet to a parchment lined sheet pan and cut into 2 pieces. Generously season both sides with kosher salt and freshly ground black pepper. Cut 1 whole lemon in half and squeeze the juice over the cod. Add a drizzle of olive oil, then transfer to the preheated oven.

- Bake for 10-12 minutes or until the code flakes easily with a fork.
- While the cod is baking, add 2 tbsp unsalted butter to a medium sized skillet over medium heat and heat until the butter starts to bubble and turns brown, 3-5 minutes..
- Once the butter has browned, add 3-4 sprigs finely chopped fresh parsley and 1/4 cup toasted pine nuts and stir to combine. Keep warm and set aside until ready to use.
- After cod has cooked, place one piece on a serving plate, spoon half of the pine nut mixture on the top of each piece of cod and drizzle the remaining brown butter over the fillets.
- Garnish with slices of fresh lemon.
