Tip : You can purchase cherry pitters to make the job easy. I bought one that pits 5 cherries at a time.

Gather the ingredients before starting the recipe.
Using a cherry pitter, remove the pits from 3/4 lb fresh Bing cherries. Cut the stems to leave about 1/3.
Transfer pitted cherries to a 500ml flip top glass jar.
Cover the cherries with 1 1/2 cup brandy or just enough to cover all the cherries.
Close the jar and refrigerate for 2 weeks.
Serve with parfait, ice cream or semi-fredo.
