Peel and thinly slice 1/4 of a medium onion.
Melt butter in a medium sized skillet over medium heat and add sliced onion, sauté until the onion becomes translucent, about 4-5 minutes.
Thinly slice the Boston lettuce and coarsely chop the leaves of 2-3 sprigs of tarragon.
Add one cup of frozen peas to the onions and cook for 2-3 minutes.
Add the lettuce and the tarragon, toss to combine, and cook for another 2-3 minutes.
