Instructions
Gather all ingredients before starting the recipe.
Peel and thinly slice 1/4 of a medium onion.
Melt 1 tbsp unsalted butter in a medium sized skillet over medium heat and add 1/4 onion thinly sliced (use mandolin) and sauté until the onion becomes translucent, about 4-5 minutes.
Thinly 1 small head Boston lettuce and coarsely chop the leaves of 2-3 sprig fresh tarragon.
Add 1 cup frozen green peas the onions and cook for 2-3 minutes.
Add the lettuce and the tarragon, toss to combine, and cook for another 2-3 minutes.
