Glazed Pearl Onions with Raisins and Almonds

Tip : Some grocery stores sell pearl onions already cleaned but still raw. If you cannot find these, then bring a couple of cups of water to a boil, dump in the pearl onions and remove from heat. Allow to stand in the hot water for a minute or two, then strain. Using a paring knife, cut the root end off of the onion and push the onion through, leaving the skin behind.

Ingredients 

  • 2 lbs pearl onions red and white
  • 1 cup sherry
  • 1/2 cup golden raisins
  • 1/4 cup honey
  • 1/4 cup water
  • 2 tbsp unsalted butter
  • 1 tsp thyme
  • 2/3 cup slivered almonds
  • 4 tbsp sherry or dry white wine vinegar

Instructions

  • Gather all ingredients before starting recipe
  • Combine peeled pearl onions with sherry, raisins, honey, water, butter and thyme in a large skillet.
  • Bring to boil over medium high heat
  • Reduce heat to a low simmer, cover and simmer until liquid evaporates and onions begin to caramelize, stirring often. This should take about 45 minutes
  • Season with salt & pepper, remove from heat and reserve until ready to serve.

Final step

  • Reheat onions over gentle heat, stir in almonds and vinegar
