Ingredients
1tbspolive oilor just enough to thinly coat the bottom of a small skillet
1/2onionred or sweetpeeled and thinly sliced
10-12babyplum or cherry tomatoescut in half
1/2cupketchup
1/4cupchicken stock
2tbspbrown sugar
2tbsphoisin or oyster sauce (Asian section of grocery store)
1tspgrated ginger
1large lemonzest and juice

Instructions
Heat 1 tbsp olive oil in a small skillet over medium heat fo 1-2 minutes,
Add 1/2 onion red or sweet thinly sliced to the skillet and cook for 2-3 minutes, or until the onion starts to soften.
Add 10-12 baby plum or cherry tomatoes cut in half, stir to combine and cook for 2-3 minutes longer,
Add 1/2 cup ketchup, 1/4 cup chicken stock , 2 tbsp brown sugar, 2 tbsp hoisin or oyster sauce (Asian section of grocery store), 1 tsp grated ginger and lemon zest and juice from 1 large lemon. Stir to combine well. Reduce heat to medium low and simmer for 10-15 minutes.
