This an amazing delicious sauce! It originates from a recipe called Daddy Wu’s Chinese Chicken, but I have used it with sautéed chicken, shrimp and even with pork. It has a remarkable flavor and is so easy to make.

Ingredients
  • 1 tbspn olive oil or just enough to thinly coat the bottom of a small skillet
  • 1/2 onion red or sweet peeled and thinly sliced
  • 10-12 baby plum or cherry tomatoes cut in half
  • 1/2 cup ketchup
  • 1/4 cup chicken stock
  • 2 tbspn brown sugar
  • 2 tbspn hoisin or oyster sauce (Asian section of grocery store)
  • 1 tspn grated ginger
  • 1 large lemon zest and juice

Instructions
  1. Heat olive oil in a small skillet over medium heat fo 1-2 minutes,
  2. Add thinly sliced onion to the skillet and cook for 2-3 minutes, or until the onions start to soften.
  3. Add tomatoes cut in half, stir to combine and cook for 2-3 minutes longer,
  4. Add ketchup, chicken broth, brown sugar, oyster or hoisin sauce, ginger and lemon zest and juice. Stir to combine well. Reduce heat to medium low and simmer for 10-15 minutes.
