Tip : This dish is made with smoked breast of duck, which is fairly common in most grocery stores. I think it's best if the duck breast is scored and then either glazed, as shown here, or just broiled after the skin has been scored. There is no need to cook the duck as it's fully cooked through the smoking process, but the breast should be heated through before serving.

Instructions
Gather all ingredients before starting recipe
Score 1 or 2 smoked breasts of duck in a diamond pattern,
Brush generously with 2 tbsp hoisin sauce.
Place duck breast on a foil lined cookie sheet along with 8-10 mini Yukon gold potatoes , add a drizzle of olive oil to the potatoes and season with 1 tsp kosher salt and toss to combine. Place in a pre-heated 375° oven for 15-20 minutes, or until the potatoes are tender and begin to brown.
Optional
Trim 1 lb fresh green beans, place in a microwave safe dish, rinse and cover with clingwrap. Microwave on high for 2 minutes, or until the beans are crisp tender.
