Gather all ingredients before starting the recipe.
Thinly slice potatoes, no need to peel. Rinse under running water, then drain the potatoes and cover with cling wrap. Microwave on high for 2-3 or minutes or just until par-cooked. Drain and set aside until ready to use.
Heat butter and oil in a medium skillet over medium high heat. Add sliced onions, season with kosher salt and cook, stirring occasionally, until the onions begin to caramelize, about 10 minutes.
Add par-cooked potatoes, season with kosher salt and gently toss with the caramelized onions. Cook, undisturbed for about 5-7 minutes, or until the potatoes begin to brown, then using a spatula, flip the potatoes over and cook for another 5 minutes.
Sprinkle with finely chopped parsley and serve.
