Tip : I use Marukan brand SEASONED rice wine vinegar. This is the one with the orange and yellow label. Once you discover this, you will use it for all kinds of salads. This is what I use whenever I call for seasoned rice vinegar.
Ingredients
1largeripe nectarineor 2 small ones and diced into1/2" dice
1largebeefsteak or 3 vine ripe tomatoescut into 8 wedges
Cut 1 large beefsteak or 3 vine ripe tomatoes into quarters or halves.
Drain 1 cup corn and add to a medium mixing bowl.
Serving
Scatter corn on the bottom a deep bowl.
Top with sliced tomato wedges.
Sprinkle all with the cubed nectarines.
Season with kosher salt and freshly ground black pepper, drizzle with seasoned rice wine vinegar and fine olive oil and crumble feta cheese on top of all.
