Tip : I use Marukan brand SEASONED rice wine vinegar. This is the one with the orange and yellow label. Once you discover this, you will use it for all kinds of salads. This is what I use whenever I call for seasoned rice vinegar.
Ingredients
- 1 large ripe nectarine or 2 small ones and diced into1/2" dice
- 1 large beefsteak or 3 vine ripe tomatoes cut into 8 wedges
- 1 cup corn
- 1/4 tsp salt
- 1/4 tsp fresh ground black pepper
- 1 tbsp Marukan seasoned rice wine vinegar
- drizzle of olive oil
- 1/3 cup crumbled feta cheese (2 oz.) optional
Instructions
- Gather all ingredients before starting recipe.
- Dice 1 large ripe nectarine into 1/2" dice.
- Cut 1 large beefsteak or 3 vine ripe tomatoes into quarters or halves.
- Drain 1 cup corn and add to a medium mixing bowl.
Serving
- Scatter corn on the bottom a deep bowl.
- Top with sliced tomato wedges.
- Sprinkle all with the cubed nectarines.
- Season with kosher salt and freshly ground black pepper, drizzle with seasoned rice wine vinegar and fine olive oil and crumble feta cheese on top of all.
