Prepare Pineapple Jam or use prepared jam for filling.
Prepare the tarte pastry and refrigerate for an hour before rolling out.
Roll out tarte pastry to about a 1/4" thickness or about a 9" round
Using a cookie cutter of your choice, cut out rounds and place on a parchment lined flat sheet.
Make a slight indentation in the center of each cookie and fill with teaspoonful of jam.
Bake in a preheated 400℉ oven for 10 to 12 minutes, or until the edge turns golden.
Allow cookies to cool then transfer them to a platter to serve.
