Gather all ingredients before starting the recipe.
In a small bowl, combine 3 1/2 oz goat cheese, 1 tbsp finely minced fresh chives , 1 tbsp finely minced fresh mint, 1 tbsp lemon juice, 1 pinch red pepper flakes and kosher salt and freshly ground black pepper. Stir to combine.
Separate 2 medium red roasted peppers into 4 segments.
Place about 1 tsp of cheese on each segment and roll up the pepper. Refrigerate the rolled up peppers for a few hours before serving.
Cut each rolled up pepper into 1" rounds, garnish with chives and mint.
