Gather all ingredients before starting the recipe.
Cut 2 whole roasted bell peppers, orange, yellow, red into 1" cubes.
Mix 1 tbsp olive oil, 1 tsp red wine vinegar, 1 clove grated clove garlic, 2 tbsp chopped parsley or basil, 1/2 tsp dried oregano and 1/2 tsp sugar in a jar with a tight fitting lid. Season with kosher salt and freshly ground black pepper and shake to combine.
Place roasted peppers in a salad dish and pour dressing over the peppers. Gently mix to combine.
