Gather all ingredients before starting the recipe.
Peel 1 small granny Smith apple and cut into 1/4" dice, add 1/2 lime juiced and toss in a small bowl to combine.
Cut 6 oz skinless salmon into strips and then into 1/4" inch dice. Transfer to the bowl with the apples.
If you make your own wasabi sauce, mix 2 tbsp Kewpie mayonnaise (or Hellman's real mayonnaise) with 1 tsp wasabi paste, 1 tsp light soy sauce and 1 tsp toasted sesame seed oil and mix to combine, Or...If you use the prepared Wasabi Sauce, mix the prepared sauce 1 tsp light soy sauce and 1 tsp toasted sesame seed oil and stir to combine.
Add wasabi sauce to salmon and apples a little at a time and gently fold to combine. Season with kosher salt and freshly ground black pepper and add 3-4 sprigs finely chopped fresh dill and toss gently.
Fill a 3" ring mold with the tarter mixture. Garnish with fresh pea sprouts and add drops of wasabi sauce around the tartare. Serve with Chinese wonton noodles.
