Maple Syrup Glazed Bacon Wrapped Pork Tenderloin

Tip : The bacon should provide the salt needed, but season with kosher salt to taste.

Instructions

  • Gather all ingredients before starting recipe.
  • Preheat oven to 400℉
  • Cut 1 lb whole trimmed pork tenderloin in half, season with kosher salt and freshly ground black pepper to taste and wrap each half with 4 strips of bacon.
  • Spray a medium sized skillet with vegetable spray and heat over medium high heat for 1-2 minutes. Add wrapped tenderloin halves and sear for 4 minutes without disturbing.
  • Flip the tenderloin and sear for another 4 minutes, then turn to sear the sides for another 2 minutes per side until all sides are golden. Transfer skillet to preheated oven and roast for 10 minutes or until the internal temperature has reached 145°F (63°C).
  • Remove tenderloin to a plate and baste with 2 tbsp maple syrup. Allow to rest for about 10 minutes before slicing.
