The occasion was just a casual catch-up with neighbors. We are seeing more and more people around us becoming social again and it’s long overdue. If we see friends and neighbors for the first time since the end of the pandemic, our not-too-distant past still creeps into the conversation, but thankfully, we do not dwell on the topic and the more we see each other, the less there is a need to talk about how we all got through it. Instead, we talk about our plans and each of us has new plans and it’s fun to share with folks we have not seen in a while.

Since it was a casual get together, I decided on small bites that I could prepare ahead of time.  I included a couple of ‘build your own’ bites as these seem to be welcome at most casual events. One of my favorites is Lettuce Cups. It’s hardy and light all at the same time. I served it with baby romaine lettuce.

My next small bite was one I have made many times, and after all it is summer and the fruit and vegetables are their best. Also, the crostini from this recipe could double for the romaine lettuce, giving some choices and variation.

I rounded out the trio with a new/old small bite. I pulled this out of my ‘must try’ files for this recipe that I tucked away years ago. It appealed to me then and it turned out much to my expectations. This feta cheese and artichoke strudel will act as a light appetizer or as a small bite. A lovely combination.
