This Cucumber Ribbon Salad is particularly good with grilled salmon and sesame scented noodles. I have served it many times as part of a starter at any number of dinner parties.
Tip : For a more rustic salad, thinly slice whole English cucumbers on a diagonal and mix with thinly sliced scallion.
Ingredients
- 1 English cucumber
- 1/4 cup chopped scallions or finely chopped shallots
Dressing
- 1/4 cup Seasoned Japanese Rice Vinegar
- 1 tbsp Asian toasted sesame oil
- 1 tbsp sesame seeds
- 2 tbsp grated ginger
- 1 pinch sugar
Instructions
- Gather all ingredients before starting recipe.
Dressing
- Place all dressing ingredients in a jar with a lid and shake well to combine.
- Cut ribbons from unpeeled English cucumber with potato peeler and place cucumber in a bowl.
- Pour dressing over cucumber ribbons, salt and refrigerate for 15 minutes to 1 hour.
