Tear 1 head red leaf lettuce or bib lettuce into bite sized pieces in a large bowl, set aside.
Peel and slice 12 rings red onion rings, drizzle 1 tbsp red wine vinegar and set aside.
Serving
Toss lettuce leaves with 1/3 cup Raspberry Maple Dressing.
Place salad greens on plates and top with sliced onion, 2/3 cup crumbled blue cheese and 3 tbsp toasted pine nuts.
