And I forgot to add the eggs, which were totally ok to include in the salad and still fit in the skinny profile.
I am still on the leaner and healthier meal plan and I dreamt this dish up on the way home from our Monday chores.
I have wanted to make something with Spanish preserved tuna for quite some time. The variety that I used for this salad comes in a clear jar, packed in water. You can also get the same tuna packed in oil, and with chilies, if you like a little heat. Oh, and by the way, plain white tuna in water would probably work just as well.
But Salad Nicoise typically includes potatoes and I wanted to stay away from potatoes. So while shopping, I thought why not substitute cauliflower florets for potatoes? It worked great! Then to add flavor, I did include steamed green beans, Kalamata olives, the tuna of course, and a pepperoncini pepper, just for some of that elevated flavor I have been talking about in previous posts. A little drizzle of Zesty Italian dressing (my new and very low calorie favorite). I served all this on a bed of butter lettuce, but like I said, I forgot the hard boiled egg.
