Believe it or not, there is not one ounce of fat, in fact no fat of any kind, in my White Bean Chicken Chili soup.

It is perfect as everything goes into the pot at the same time, chicken, vegetables, spices and chicken stock, stir and bring to a boil.

It is a ‘skinny’ kind of staple in our household as it is satisfying, delicious and filling. It’s especially good with cold weather, or cool weather in Florida. It always makes enough for four, or even more, so it’s a great solution for a lunch after a round of golf without the rush to make something to eat as we are ‘starving’? Or at least, I am.
