Coq au Vin Blanc

Before the turkey takes center stage, there’s something deeply satisfying about indulging in classic comfort food that celebrates the season in its own quiet way. Traditionally made with red wine, Coq au Vin is a beloved French dish that’s rich, rustic, and deeply flavorful. But I prefer mine with white wine, it lends a lighter color and a beautifully nuanced flavor that feels just right for fall. The chicken becomes tender and infused with the wine, herbs, and aromatics as it gently braises. It’s elegant enough for company, yet comforting enough for a quiet night in. Serve with creamy mashed potatoes, which soak up every drop of the luscious sauce. But it’s equally delightful with fluffy white rice or a tangle of buttered noodles.
