The inspiration for this Boston Tower Salad was the Farmer’s Market. The display of Boston Lettuce on at one of the stalls was exceptional.
But Boston lettuce, being Boston lettuce, you must treat the lettuce with a lot of care as it will quickly collapse. So the answer to this is to build a tower, layering one leaf on top of another leaf until you have created a well balanced beautiful tower of brilliant green.
However, going back to Boston lettuce being Boston lettuce, you cannot toss the leaves in dressing as the leaves will again crumble. So, instead, drizzle a small amount of dressing on each leaf as you are layering.
It fun, it’s beautiful and it’s different.
I served it with the French Omelet as well as a Flat Iron Skillet Steak with stove top roasted potatoes.
