This Blue Cheese Onion Sauce is a decadent, rich sauce for a sirloin or a Butcher’s Cut Chuck Rib Eye steak. Be sure to put the sauce on the plate and top with the steak. You will get a wonderful taste of the sauce with each steak bite but it won’t overwhelm the steak.

Ingredients 

  • 1 tbsp butter
  • 1/2 sweet onion thinly sliced
  • 1/3 cup heavy cream
  • 3-4 tbsp creamy blue cheese such as gorgonzola
  • kosher salt and freshly ground black pepper

Instructions

  • Gather all ngredients before starting recipe.
  • Melt 1 tbsp butter in a medum skillet over medium high heat. When the butter has melted, add 1/2 sweet onion, thinly sliced.
  • Sauté onions until they are begining to carmelize, about 5-6 minutes, then add 1/3 cup heavy cream and bring to a boil.
  • Reduce heat to medium and add 3-4 tbsp creamy blue cheese and season with kosher salt and freshly ground black pepper. Serve with grilled steak.
