Chili and Black Pepper Roasted Carrots are easy to make and the ingredients are likely already in your pantry. You can use them as side to any roasted meat recipe, but they are especially a nice addition when making Spiced and Seasoned Roasted Veggie Platter for a party.
Ingredients
- 3 large carrots peeled and cut into 1/2 inch slices
- 2 tbsp chili powder
- 1 tspn ground black pepper
- 3 tbsp fresh chopped parsley (or 2 tablespoon dried)
- kosher salt to taste
- 2 tbsp olive oil
Instructions
- Gather all ingredients before starting recipe.
- Pre heat oven to 450°
- Peel carrots and cut into 1/2" thick rounds.
- Mix the chili powder, black pepper, parsley and olive oil, pour over the sliced carrots.
- Place on a non-stick aluminum foil lined cookie sheet and bake for 25-30 minutes, turn halfway through.
