Corned Beef Sliders are another way to use that leftover St. Patrick’s Day corned beef. Sliders are just the right size for a lunch portion, and you can create a copycat of a deli style sandwich, right down to the Russian dressing.

Ingredients 

  • 8 slices cooked corned beef or a deli slice of corned beef about 1/2" thick
  • 2 tbsp Russian dressing or make you own with 1 tbsp sweet relish, 1 tbsp mayonnaise and 1 tbsp ketchup
  • 4 slices Swiss cheese
  • 6 tbsp sauerkraut
  • 4 slider buns

Instructions

Gather all ingredients before starting recipe

  • Spread the top and bottom of each bun with Russian dressing,
  • Add 8 slices cooked corned beef about 1/2" thick and allow 2 slices to fit each slider bun. You can also use deli corned beef for this. Top 4 buns with corned beef divided for each of 4 buns.
  • Cut 4 slices Swiss cheese in half and top the corned beef.
  • Mound 1-2 tbsp of sauerkraut on the cheese
  • Microwave on high for 1 minute to melt the cheese and warm the corned beef.
    Allow to cool for a couple of minutes and serve with a side of your favorite chips.
