When cherries are at their best, I try to use them in various ways to enjoy them more. One of these is Drunken Cherries, which is a very simple dessert or drink condiment. It only has two ingredients, there is no cooking involved and the cherries stay fresh and crunchy. Just cover the cherries in brandy and refrigerate for a couple of weeks, then enjoy!

Tip : You can purchase cherry pitters to make the job easy. I bought one that pits 5 cherries at a time.

Ingredients 

  • 3/4 lb fresh Bing cherries pitted
  • 1 1/2 cup brandy or enough to cover the cherries

Instructions

Gather the ingredients before starting the recipe.

  • Using a cherry pitter, remove the pits from 3/4 lb fresh Bing cherries. Cut the stems to leave about 1/3.
  • Transfer pitted cherries to a 500ml flip top glass jar.
  • Cover the cherries with 1 1/2 cup brandy or just enough to cover all the cherries.
  • Close the jar and refrigerate for 2 weeks.
  • Serve with parfait, ice cream or semi-fredo.
