A childhood favorite, Layered Potatoes (or in Hungarian, Rakott Krumpli) is an incredibly delicious dish. I usually make it when the weather turns cooler. It is comfort food at it’s best, and for some unknown reason, it’s really good with a couple of slices of plain white bread. A crunchy French baguette is also delicious. Try it with a side dish of dill pickle slices.

Tips
Don't skimp on the butter and sour cream. Also, make sure that the potatoes are fully cooked and do not have a bone. This dish is actually better on the second day when the butter and sour cream have been absorbed by the potatoes.

Ingredients
  • 2 large baking potatoes boiled in their skin
  • 6 large hard-boiled eggs
  • 4 small pepperoni sausages
  • 1/3 cup unsalted butter
  • 3/4 cup sour cream
  • 1 tbspn kosher salt

Instructions
  1. Gather all ingredients before starting recipe.
  2. Boil baking potatoes until soft, drain and allow to cool.
  3. When potatoes have cooled enough to handle, peel and reserve whole.
Pre-heat oven to 325°
  1. Slice pepperoni into 1/2" slices and place in a non-stick pan over medium high heat until browned, about 5 minutes.
  2. Turn pepperoni periodically until all slices have browned, remove from heat.
  3. Combine sour cream with a 1/4 cup of water to thin to a pouring consistency.
Assembly
  1. Cut thin slivers of butter and drop in the bottom of an oven proof casserole dish with a lid.
  2. Cut potato into 1/2" slices and place a single layer on top of the slivered butter in the bottom of casserole.
  3. Season the potatoes with kosher salt, then slice 1-2 hadrboiled eggs and layer on top of the potatoes.
  4. Drizzle sour cream over potato egg layer, then add another layer of butter slivers and finally add a layer of pepperoni.
  5. Repeat sliced potato, sliced egg, salt, sour cream, butter slivers, pepperoni ending with pepperoni on the top layer.
Baking
  1. Cover casserole and place in a 325°pre heated oven and bake for 30 minutes.
  2. Uncover when done, allow to rest for 10 minutes.
Serving
  1. Serve with a few slivers of dill pickle and crusty French Bread.
