I recently saw amazing roasted yellow and orange bell peppers at my grocer. The first thing that came to mind was what a wonderful Roasted Bell Pepper Salad they would make with a light vinaigrette. It was delicious. In some cases, why make when you can buy?
Ingredients
- 2 whole roasted bell peppers, orange, yellow, red
- 1 tbsp olive oil
- 1 tsp red wine vinegar
- 1 clove grated clove garlic
- 2 tbsp chopped parsley or basil
- 1/2 tsp dried oregano
- 1/2 tsp sugar
- kosher salt and freshly ground black pepper
Instructions
Gather all ingredients before starting the recipe.
- Cut 2 whole roasted bell peppers, orange, yellow, red into 1" cubes.
- Mix 1 tbsp olive oil, 1 tsp red wine vinegar, 1 clove grated clove garlic, 2 tbsp chopped parsley or basil, 1/2 tsp dried oregano and 1/2 tsp sugar in a jar with a tight fitting lid. Season with kosher salt and freshly ground black pepper and shake to combine.
- Place roasted peppers in a salad dish and pour dressing over the peppers. Gently mix to combine.
