Ingredients
  • 1 tbspn all-purpose flour
  • 1 tb unsalted butter
  • 1 cup chicken stock
  • 1/2 cup whipping cream
  • 1-2 tbspn dry sherry
  • 1 tbspn chopped chives
  • 1-2 tbspn fresh chopped tarragon or 3 teaspoons of dry tarragon
  • white pepper to taste
  • 1-2 drops fresh lemon juice

  1. Gather all ingredients before starting recipe.
  2. Heat butter over medium high heat in a small sauce pan until the butter is bubbly.
  3. Add flour and stir until the flour is a light blond color.
  4. Add chicken stock and whisk with a wire whisk until smooth and begins to bubble, reduce heat and cook until slightly thickened.
  5. Add white pepper, tarragon, chopped chives and cream and stir until well combined. Reduce heat and simmer until slightly reduced, 8-10 minutes,
