A lovely pre‑dinner appetizer, this Tomato Galette is light, full of flavor, and undeniably pretty on the plate. I simply chose evenly ripe tomatoes, added whatever cheeses I had on hand, and baked the galette for 30 minutes. It reheats beautifully. Just warm it briefly before serving.
