Whenever I make Breaded Chicken Cutlets, I almost always end up with a few left over, and honestly, I count on it. Those extra cutlets turn out just another delicious slider and a great lunch in about fifteen minutes, which fits perfectly into otherwise busy days. A little pizza sauce, some cheese, and those sliced cutlets, and lunch practically makes itself.
