Left over ribs from a recent dinner make an excellent lunch for two. Just layer a piece of naan with bottled BBQ sauce, ribs, some sliced red onion, chevre and roasted red peppers and you can make a fast and satisfying lunch for two!

Ingredients 

  • 4-5 cooked spare ribs, boned
  • 1-2 tbsp bottled smoky bbq sauce
  • 6-8 slices roasted pepper slices (store bought)
  • 2 tbsp chevre cheese crumbled
  • 5-6 slices red onion
  • 1 slice naan

Instructions

  • Gather all ingredients before starting recipe.
  • Pre heat oven to 375°
  • Peel and thinly slice 1/3 of a red onion into rings.
  • Line a baking sheet with aluminum foil and top with a baking rack.
  • Remove meat from cooked ribs and cut into thin strips.
  • Thinly spread bottled BBQ sauce on naan.
  • Lay the sliced cooked meat on top of the sauce, drop a few dollops of BBQ sauce over the meat.
  • Top the mixture with slices roasted red peppers, crumbles of chevre cheese, and finally the sliced red onion.
  • Bake in a pre heated 375° for 15 minutes, cut in half and serve.
