Repurposing leftovers is an art, and with a little creativity, you can turn yesterday’s dinner into a satisfying and flavorful meal. Leftover ribs from a recent dinner serve as the perfect base for Another Two-Fer quick lunch that doesn’t skimp on taste. Here’s a simple recipe to elevate your lunchtime using ingredients you likely have on hand.
Ingredients
- 4-5 cooked spareribs
 - 1-2 tbsp bottled smoky BBQ sauce
 - 6-8 slices roasted pepper slices (store bought)
 - 2 tbsp chevre cheese crumbled
 - 5-6 slices red onion
 - 1 slice naan
 
Instructions
- Gather all ingredients before starting the recipe.
 - Pre heat oven to 375°F
 - Peel and thinly slice 1/3 of a red onion into rings.
 - Line a baking sheet with aluminum foil and top the sheet with a baking rack.
 - Remove meat from 4-5 cooked spareribs and cut into thin strips.
 - Thinly spread 1-2 tbsp bottled smoky BBQ sauce on naan.
 - Lay the sliced cooked meat on top of the sauce, drop a few dollops of BBQ sauce over the meat.

 - Top the mixture with slices of 6-8 slices roasted pepper slices (store bought), 2 tbsp chevre cheese and finally the sliced red onion.
