I bought some ricotta cheese for another recipe and was amazed how delicious and creamy the cheese was. It was so good that I combined it with a few other ingredients and created a perfect spring inspired dinner of Bucatini with Spring Peas, Ricotta and Smoked Ham.

Ingredients
  • 2 portions bucatini (uncooked)
  • 2 tbspn unsalted butter
  • 1 tbspn olive oil
  • 1 whole shallot finely chopped
  • 3/4 cup ham smoked (1/2" cubes)
  • 1 clove garlic clove thinly sliced
  • 1 cup frozen peas
  • 1 lemon zest only
  • 3/4 cup ricotta cheese
  • 1/4 cup grated parmesan cheese
  • kosher salt and freshly ground black pepper to taste

  1. Gather all ingredients before starting recipe
  2. Cook bucatini in a pot of salted water until al dente according to package instructions. When the pasta is cooked, remove from heat and leave in the pasta water.
  3. While the pasta is cooking, heat butter and olive oil in a medium skillet over medium heat. Add chopped shallots, sliced garlic and the diced ham. Sauté for 5-6 minutes or until the shallots become translucent and the ham is beginning to brown at the edges.
  4. Add frozen peas and cook for 5-6 minutes or until the peas are heated through.
  5. Transfer pasta from cooking water directly to skillet and toss gently to combine. Season with salt and pepper.
  6. Remove skillet from heat and add ricotta and parmesan cheese to pasta, toss again to combine.
  7. Add the grated lemon zest, combine and serve.
