French Potato Salad is French because of the dressing, and believe it not, because of the way that the potatoes are cut! Very important if you would like to be authentic. Otherwise, it would just be a potato salad with a vinaigrette. Just a little imagination.

Tip : You can use any fresh herb that you like, I especially like fresh tarragon or dill for this salad as it gives it a fresh flavor.

Ingredients 

  • 2 medium white potatoes cut into 8ths

Dressing

  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 tbsp sherry vinegar
  • 2 tbsp chopped fresh tarragon or dill or parsley
  • 1/2 tspn dried thyme
  • 1/4 small red onion thinly sliced
  • 1 small shallot thinly sliced
  • kosher salt and freshly ground black pepper to taste

Instructions

Gather all ingredients before starting the recipe.

  • Slice potatoes in half lengthwise, then quarter each half, lengthwise
  • Place potatoes in a medium sized sauce pan, rinse under cold running water, then cover with water and bring to a boil. Reduce heat to medium and cook potatoes for 15 minutes, or until you can easily pierce with the tip of a knife.
  • Combine all dressing ingredients in a medium mixing bowl and stir to combine. Set aside until the potatoes are cooked.
  • Drain potatoes and combine hot potatoes with the dressing, toss gently to cover all sides of each potato and serve at room temperature.
