Chicken Brochettes are easy to make and taste like a summer BBQ. I usually make them from skinless, boneless chicken thighs marinated in garlic, olive oil, herbs, and lemon.  Try serving the brochettes with a side of yummy Garlic Lemon Couscous.

Ingredients 

  • 4-6 skinless boneless chicken thighs
  • kosher salt and freshly ground black pepper
  • wooden skewers

Marinade

  • 2 sprigs fresh thyme stripped from stems, or 1 tsp dried
  • 3-4 sprigs fresh parsley finely chopped
  • 1 tsp dried oregano flakes
  • 1 tsp freshly ground black pepper
  • 2 cloves garlic grated
  • 1 lemon zested and juiced
  • 1/3 cup olive oil

Gather all ingredients before starting recipe

  • Finely chop 2 sprigs fresh thyme, 3-4 sprigs fresh parsley, grate 2 cloves garlic, add 1 lemon zested and juiced and combine in a small bowl. Add 1 tsp dried oregano flakes and 1 tsp freshly ground black pepper and add 1/3 cup olive oil. Mix to combine.
  • Season the chicken thighs with kosher salt and freshly ground black pepper and using 2 skewers per chicken thigh, push the skewer through each piece.
  • Place on a platter and cover both sides with the marinade and set aside for up to 30 minutes before grilling,
  • Pre heat outdoor grill to high, place a sheet of aluminum foil to one side and place the marinated chicken brochettes on the hot grill placing the wooden skewers on the aluminum sheet. Grill for about 20 minutes, or until cooked through on high, turning after 10 minutes.

Serving

  • Serve with Garlic Lemon Couscous
