Chicken Brochettes are easy to make and taste of summer BBQ. I usually make it from skinless, boneless chicken thighs marinated in garlic, olive oil, herbs and lemon. Serve it with a side salad of yummy Garlic Lemon Couscous.

  • 4-6 skinless boneless chicken thighs
  • Wooden skewers
  • 2 sprigs fresh thyme stripped from stems, or 1 tsp dried
  • 3-4 sprigs fresh parsley finely chopped
  • 1 tsp dried oregano flakes
  • 1 tsp freshly ground black pepper
  • 2 cloves garlic grated
  • 1 lemon zested and juiced
  • 1/3 cup olive oil

  1. Gather all ingredients before starting recipe
  2. Finely chop parsley and thyme, grate garlic, zest and juice one lemon and combine in a small bowl. Add oregano, black pepper and finally, add the olive oil. Mix to combine.
  3. Season the chicken thighs with Kosher salt and using 2 skewers per chicken thigh, push the skewer through each piece.
  4. Place on a platter and cover both sides with the marinade and set aside for up to 30 minutes before grilling,
  5. Pre heat outdoor grill to high, place a sheet of aluminum foil to one side and place the marinated chicken brochettes on the hot grill. Grill for about 20 minutes, or until cooked through on high, turning after 10 minutes.
