Ham, Cheese and Crispy Croutons make a wonderful frittata. This is just a variation on a theme using whatever you have on hand. It’s always fast and satisfying for a light brunch dish. I usually serve it with my Romaine and Bell Pepper Salad.
Ingredients
- 4 whole eggs
 - 1/3 red onion thinly sliced
 - 1 cup ham cut into cubes
 - 1 cup prepared croutons
 - 1/2 cup grated cheddar cheese
 - kosher salt and freshly ground black pepper
 - vegetable spray
 
Instructions
Gather all ingredients before starting the recipe.
- Pre-heat oven to 425℉
 - Using a fork, whip 4 whole eggs until combined.

 - Add 1/3 red onion, thinly sliced, 1 cup ham, 1 cup prepared croutons and season mixture with kosher salt and freshly ground black pepper. Mix to combine ingredients.
 - Spray a non-stick small skillet with vegetable spray and add the egg mixture.
 - Top egg mixture with 1/2 cup grated cheddar cheese.
 - Bake in a pre-heated oven for about 30 minutes, or until the top is nicely browned and the edges are sizzling.
 - Serve with a side of Romaine and Bell Pepper Salad
