Ham, Cheese and Crispy Croutons make a wonderful frittata. This is just a variation on a theme using whatever you have on hand. It’s always fast and satisfying for a light brunch dish. I usually serve it with my Romaine and Bell Pepper Salad.

Ham, Cheese and Crispy Crouton Frittata

Ingredients 

  • 4 whole eggs
  • 1/3 red onion thinly sliced
  • 1 cup ham cut into cubes
  • 1 cup prepared croutons
  • 1/2 cup grated cheddar cheese
  • kosher salt and freshly ground black pepper
  • vegetable spray

Instructions

Gather all ingredients before starting the recipe.

  • Pre-heat oven to 425℉
  • Using a fork, whip 4 whole eggs until combined.
  • Add 1/3 red onion, thinly sliced, 1 cup ham, 1 cup prepared croutons and season mixture with kosher salt and freshly ground black pepper. Mix to combine ingredients.
  • Spray a non-stick small skillet with vegetable spray and add the egg mixture.
  • Top egg mixture with 1/2 cup grated cheddar cheese.
  • Bake in a pre-heated oven for about 30 minutes, or until the top is nicely browned and the edges are sizzling.
  • Serve with a side of Romaine and Bell Pepper Salad
