This simple Romaine and Bell Pepper salad is my go to salad as a side for frittata, savory tarts and even grilled chicken in the summer.

I have also taken it into the fall and winter as I serve it with various meat pies and it’s always a great accompaniment. Takes minutes make and it’s usually the first to be eaten as once you taste it, you just can’t stop eating until you finish.

Ingredients
  • 1 heart of Romaine sliced into 1/2" ribbons
  • 1/4 red bell pepper chopped
  • 1/4 green bell pepper chopped
  • 1 tbspn seasoned rice vinegar
  • 1 tbspn olive oil

Instructions
  1. Gather all ingredients before starting recipe.
  2. Slice Romaine heart into 1 inch ribbons and cut 1 or 2 slices from each of a red and green bell pepper.
  3. Either slice or dice peppers and combine with the salad greens in a medium mixing bowl and toss with seasoned rice vinegar and olive oil.
