I had most of a can of crushed pineapple leftover from making a Hawaiian pizza for lunch and it turned into Homemade Pineapple Jam. The pineapple jam then turned into Pineapple Jam Cookies. I just did not want to throw away the pineapple, so it turned into a lovely jam and lovely cookies.

Ingredients 

  • 1 cup crushed pineapple
  • 2 tbsp sugar
  • 5 whole cloves
  • 1 tsp ground cinnamon
  • 1 tbsp golden syrup

Instructions

Gather all ingredients before starting the recipe.

  • Combine 1 cup crushed pineapple, 2 tbsp sugar, 5 whole cloves, 1 tsp ground cinnamon and 1 tbsp golden syrup in a medium sized saucepan, stir and bring to a boil, reduce heat to a low simmer.
  • Stir occassionally to reduce the mixture and continue to gently simmer.
  • Cook for 1 hour and 30 minutes, or until the mixture is thick and has turned a golden color.
  • Remove from heat, allow to come to room temperature and then transfer to a jar with a tight lid and refrigerate.
