I combined my Homemade Pineapple Jam with French tarte pastry to create my Pineapple Jam Cookies. What a delicious combination!
Ingredients
- 1 recipe French Tart Pastry
- 1 recipe Homemade Pineapple Jam
Instructions
Gather all ingredients before starting the recipe.
- Prepare Pineapple Jam or use prepared jam for filling.

- Prepare the tarte pastry and refrigerate for an hour before rolling out.

- Roll out tarte pastry to about a 1/4" thickness or about a 9" round

- Using a cookie cutter of your choice, cut out rounds and place on a parchment lined flat sheet.

- Make a slight indentation in the center of each cookie and fill with teaspoonful of jam.

- Bake in a preheated 400℉ oven for 10 to 12 minutes, or until the edge turns golden.
- Allow cookies to cool then transfer them to a platter to serve.
