I combined my Homemade Pineapple Jam with French tarte pastry to create my Pineapple Jam Cookies. What a delicious combination!

Gather all ingredients before starting the recipe.

  • Prepare Pineapple Jam or use prepared jam for filling.
  • Prepare the tarte pastry and refrigerate for an hour before rolling out.
  • Roll out tarte pastry to about a 1/4" thickness or about a 9" round
  • Using a cookie cutter of your choice, cut out rounds and place on a parchment lined flat sheet.
  • Make a slight indentation in the center of each cookie and fill with teaspoonful of jam.
  • Bake in a preheated 400℉ oven for 10 to 12 minutes, or until the edge turns golden.
  • Allow cookies to cool then transfer them to a platter to serve.
